Yucho Shuzo has brewed in Gose, Nara, since 1719, and the Kaze no Mori line launched by the 12th-generation brewer in 1998 established a defining commitment: every expression bottled unpasteurized and undiluted, with no compromise on freshness. The S Trial Edition belongs to the brewery's ALPHA experimental series, pushing beyond the conventions of Kaze no Mori through creative fermentation: unconventional rice varieties, yeast explorations, and techniques outside the standard lineup. Whatever the specific experiment, the house character remains: textured, vibrant, and expressive, with the signature melon-fresh aroma, lively effervescence from natural CO2, and an immediate wildness that demands refrigeration and rewards quick consumption.

In 1998, the wind forest began with the desire to have locals drink raw liquor using local rice. The name is derived from the place name "Kaze no Mori Pass" in Gosho City. Located at the foot of Mt. The tradition of Nara Sake, which was established 500 years ago, is modified by using modern technology, and will continue to challenge sake that can only be built in the present era and the next sake. In the wind forest, it expresses the difference between the type of rice and the taste of polishing. In ALPHA -style forests, flexible ideas and new technologies seek the potential of the next sake.
