Juyondai Nakadori Jungin Bansyu Aiyama is a junmai ginjo from Takagi Brewery in Yamagata, using Aiyama, a rare and prized sake rice from the Banshu (Hyogo) region. Nakadori (middle-run) pressing selects the finest, most balanced portion of the pressing, producing a layered expression with the characteristic sweet richness Juyondai is known for.
