Nakate Shinsenbon rice is a Hiroshima staple sake variety used at 70% for this junmai, which won consecutive gold awards at the Kandoshu Contest (2010-2011). The brewery's signature characteristic is a lightness unusual for pure-rice sake, with well-integrated umami and acidity that pairs naturally with food.
