Junmaishu Itaru is the core junmai expression from Henmi Shuzo, the smallest brewery on Sado Island in Niigata, which follows a philosophy of natural beauty sake that preserves original flavors through minimal processing. The brewery uses traditional yamahai fermentation, the only such producer on Sado, yielding a sake with layered umami, lively acidity, and a clean finish.
