Description

Bodaimoto is Nara's ancient fermentation starter method, predating modern brewing techniques by centuries, and this junmai uses it with Yamada Nishiki to produce a sake of deep, robust umami with a characteristically firm acidity. The brewery revived this traditional Nara-origin technique to deliver a richly flavored, aromatic junmai that has been described as shifting from heavy and sweet to a refined, dry-rich style.
