Junmai Muroka Namagenshu from Itakura Shuzo Co., Ltd. in Shimane is an unfiltered, unpasteurized, undiluted pure-rice sake that preserves the full intensity of the fermentation as it came from the press. The muroka designation means no activated charcoal filtration has been applied, maintaining the sake's natural color and raw flavor. As a genshu, it is at full strength without water dilution, offering a bold, complex expression of Shimane's junmai ginjo style.

Founded Meiji 4 years, with the motto of "living in taste and aroma", while mechanization is progressing, koji and sake mother structure are handled by skilled forests, and under Mr. Yoshihisa Nagasaki, a master of Ginjo brewing. Sake brewing is made using 5 million stones from the prefecture, improvements, Saika Nishiki, and Yamada Nishiki from Hyogo.
