Tenon YamahaiJunmai Omachi

🍶
Description

Itakura Shuzo applies the yamahai method to Omachi rice in crafting this junmai from Shimane, a technique that relies on naturally occurring lactic bacteria to develop the yeast starter. Omachi rice, known for its bold flavor profile and lower starch yield, pairs well with the yamahai's characteristic acidity and savory depth.
