Description

Junmai Ginjo Genshu Sendaibozu features the Sendai Bozu rice variety, an heirloom cultivar painstakingly revived from just 14 grams of seeds recovered from the Meiji era, and is produced by Hokushika Shuzo using their established ginjo brewing techniques. The rice is polished to 50%, and the sake is brewed as an undiluted genshu, delivering concentrated rice-forward flavor alongside the delicate aromatics characteristic of this heritage variety. This limited expression combines historical rice preservation with modern ginjo craftsmanship, making it a distinctive showcase of Akita brewing heritage.
