Junmai Ginjo Katakurinohana is named after the delicate katakuri wildflower that blooms in early spring in the mountains of Okuizumo, Shimane. Produced by Hikami Seishu using locally grown sake rice polished into the ginjo range and fermented at low temperatures, it delivers a soft, floral aroma with gentle sweetness and a clean finish. It reflects the brewery's practice of drawing on the seasonal natural character of the Izumo highland environment.
