Milled to 40% from Munakata-grown Yamada Nishiki tended by the brewery's own farmers, this junmai daiginjo from Okina Shuzo in Fukuoka is produced in strictly limited quantities. Rather than chasing high fragrance, the house style keeps aromatics moderate so that the rounded, sweet rice character takes center stage.
