This junmai daiginjo is fermented using the slow, wild yamahai method and bottled unfiltered, undiluted and unpasteurized. It shows a tart, lightly bitter profile with notes of bitter orange, grapefruit, rhubarb and mineral water, balanced by savory hints of fermented honey and almond paste. The mouthfeel is dense yet light with a long, lingering finish.
