The yamahai counterpart to Masukagami's J55 series uses traditional lactic-acid starter cultivation to coax a notably higher acidity than the brewery's conventional junmai ginjo. Rich, layered umami and a firm backbone make it well-suited to warming and pairing with bold cuisine.
