Limited production of sake in Tottori Prefecture, Junmai Daiginjo Sake with 40 % "powerful" rice policy. "Powerful rice" is Tottori's rice, which was cut off in 1954. It is a "resurrection rice" that has been increased to the amount of a handful of paddy in 1989 to the amount of alcohol for two years. The scent is reminiscent of the steaming of new rice, and the fragrance is a rich taste that is integrated with bitterness, sourness, astringency, and sweetness. A sake that can be said to be the origin of a unique local sake where you can feel the masculine strength while giving it an unbridled taste.
