Ichishima Ginjo Koshu is an aged ginjo from Oumon Shuzo (founded 1790) in Shibata, Niigata, matured to develop greater depth and complexity. The house relies on spring water sourced from the Kajikawa river system and sake rice grown in the prefecture, producing sake with a gentle sweetness and the clean, refined character of Niigata ginjo.
