Honjozo Koshu Toki no Shizuku is a matured honjozo from Izawa Honke in Hyogo Prefecture, aged deliberately over an extended period to develop the amber color, deep umami, and nutty complexity associated with koshu aged sake. The name Toki no Shizuku means 'drops of time,' reflecting the patient maturation process that transforms this honjozo into a richer, more contemplative expression. Hyogo's brewing heritage supports the production of sake with the structure necessary for long-term aging.
