Honjozo from Imai Shuzoten in Nagano city, under the Wakamidori label whose name is drawn from an Edo-period noh chant and embodies the spirit of perpetual freshness. Brewed entirely by hand from locally grown Nagano rice in an unbroken tradition since 1691, it is a warming, slightly full-flavored everyday sake with a rounded sweetness and umami.
