Description

Hiroshima Hattan Ginjo from Hakubotan Shuzo is brewed in Saijo, Higashi Hiroshima, the oldest sake brewery in that celebrated district, founded in 1675. The use of Hattannishiki rice, Hiroshima's signature sake rice prized for its ginjo-favorable qualities and aromatic potential, reflects a tradition of local terroir expression in Saijo's soft-water brewing environment. Hakubotan is associated with Japan's soft-water brewing revolution of the late 19th century, which helped pioneer the elegant, aromatic ginjo style now recognized worldwide.
