Hinodetsuru Junmai Ginjo is a no-alcohol-added ginjo from Inoue Shuzo, expressing Kochi's dry style through pure rice fermentation at the ginjo level. The junmai designation adds a fuller body and richer rice umami compared to the honjozo versions, while the ginjo polishing brings fruity, aromatic complexity. This balance of regional dryness and pure rice character makes it a compelling expression of Kochi sake.
