Hinodetsuru Ginjoshu is the ginjo expression from Inoue Shuzo's Kochi brewery, combining the prefecture's signature dryness with the fragrant elegance of ginjo brewing. Kochi ginjo brewing applies the soft-water brewing expertise of Shikoku to produce sake with aromatic lift alongside the region's characteristic dry finish. This ginjo represents a refined step up within the Hinodetsuru range.
