Fukugao's Usuya Ginjo uses Koshi Tanrei, a Niigata-native sake rice, polished to 55% at this 1897-founded Sanjo City brewery, the only sake producer in its city, named under the original Usuya brand that the brewery carried at founding before the Fukugao name took hold. The Usuya line represents Fukugao's premium handcrafted tier, using only Sanjo-grown rice and the brewery's extra-soft Ikarashi River water.
