Karakuchi (Dry) Fukugao from this 1897-founded Sanjo City brewery uses Gohyakumangoku rice at 60% polish with the extra-soft, sand-filtered water of the Ikarashi River for a clean, dry everyday expression suited to a wide range of food pairings. From Niigata's only Sanjo-based sake producer, it delivers the refreshing, crisp character that Niigata's soft-water brewing tradition is known for in a straightforward, approachable dry format.
