Ginjo Namachozoshu from Izuhonten in Fukuoka Prefecture is a ginjo-grade sake stored unpasteurized throughout its aging period and pasteurized only once at bottling, following the nama-chozoshu method. This single-pasteurization approach preserves more of the sake's fresh, vibrant aromas while extending shelf stability compared to fully raw sake. The ginjo polishing level of at least 60% contributes delicate fruity and floral notes that are well-suited to this lively storage style.
