Fukugao's Echigo Ikarashigawa Ginjo uses Gohyakumangoku rice polished to 55% and the extra-soft, sand-filtered water of the Ikarashi River to produce a classically elegant Niigata ginjo at this 1897-founded Sanjo City brewery. Soft water is historically associated with delicate fermentation and refined flavor in Niigata's brewing tradition, and the Fukugao brewery has spent generations mastering its unique fermentation properties.
