Description

Plum liqueur from Yoshinogawa in Niigata, made by macerating Beniashi ume from Fukui Prefecture in sake and blending in the brewery's flagship dry nihonshu. The Beniashi plum, difficult to cultivate and prized for its dense flesh and rich juice yield, contributes a well-balanced acidity and sweet depth, with a clean finish from the added sake.

Echigo's tiger, Kenshin Uesugi, has been protecting the tradition and has brewed Echigo's good sake for 470 years. But I did not do the same thing. It was 470 years of the challenge.
