Fukucho Karakuchi Junmai is produced by Imada Shuzo in Akitsu-cho, Higashihiroshima, Hiroshima, under the Fukucho brand, which is guided by toji Miho Imada, one of Japan's most celebrated female master brewers. Hiroshima is known for its soft, mineral-light water that was historically challenging for sake brewing until pioneering soft-water techniques were developed in the late 19th century, now producing sake with a smooth, rounded mouthfeel. This dry junmai showcases Imada's skill in crafting a clean, food-friendly sake that balances karakuchi dryness with the gentle umami characteristic of Hiroshima's soft-water brewing style.
