Emi is the pure-rice flagship of female toji Toyosawa Megumi at Nishimoto Shuzo in Tottori, developed in 1999 as the brewery's first junmai. Tamasakae rice and soft local water produce a rounded mouthfeel with a clean, dry finish at a sake meter value of +3.5.
