
Junmai Daiginjo Dassai Bisui" has been reborn with 20% polishing. Low-alcohol sake has been a challenge for Asahi Shuzo for 20 years, and after many challenges, it has bounced back against a high wall. Adjusting with water does not produce a satisfying taste and aroma. In the initial stage of fermentation, temperature control and pumping water control are performed more delicately than in "Beyond Polishing", resulting in a sake whose alcohol content does not reach 12% even at the final stage. After squeezing, it is bottled as it is without adding any water. As a result, a sake with an alcohol content of only 11% but with a strong aroma and the dignity of Junmai Daiginjo was born.
