Craft Dassai - Junmai Daiginjo sake from DASSAI Inc., Yamaguchi
Description

Generally in Japan, the word "craft" is often used with the image of "handmade", but it was originally used as a word to refer to things created through skill and technique. Dassai is a brewery that is characterized by the youthfulness of its brewers, with an average age of 29. However, when it comes to sake brewing called Junmai Daiginjo, we are the "manufacturing group with the highest experience in Japan", which experiences the amount of sake produced in the lifetime of a toji in one year. Among them, a group of two young brewers utilizes the knowledge and skills that they have accumulated at Asahi Shuzo to make delicious sake, and the sake that expresses the essence of Dassai, that is [CRAFT Dassai].

Here at DASSAI, we cherish sake crafting. Like it was the case for wine, the world of ginjo sake is often described as something too difficult to understand unless you are a connoisseur. That is definitely not the case. Anybody could tell a truly great sake when tasted. All of us at DASSAI aim for a truly great sake.
