Hyogo Prefecture Yamada Nishiki is polished to 35% and fermented at low temperature using the clean groundwater of Hita, a historic Edo-period city in Oita. This daiginjo has earned ten gold prizes at the National New Sake Appraisal and shows a gentle ginjo aroma with a soft, dry palate.
