Description
Daiginjo Oban uses Shizukuhime, an Ehime Prefecture original sake rice variety developed in 2009, polished to 45% by Nishimoto Shuzo. Shizukuhime imparts a mellow richness and soft mouthfeel characteristic of Ehime brewing, alongside the elegant aromatic profile typical of daiginjo.

All alcoholes are Honzo brewing (no sugars are added), and even general liquor meets the cost of 58 % of the rice polishing ratio and the requirements for Ginjo sake (60 % or less).
Our proud tiger tail is 38 % for rice polishing ratio, which has a higher positive white rate compared to normal Daiginjo (50 % or less).
In the commitment to the material of the president who is the oldest Ehime prefecture, Yamada Nishiki, which is used for the tiger tail, uses special rice from Hyogo Prefecture.
