Fukugao's Echigo Ikarashigawa Daiginjo Genshu (undiluted) uses Yamada Nishiki polished to 40% for a full-strength, concentrated premium expression from this 1897-founded brewery in Sanjo City, the only sake producer in its city. Named after the Ikarashi River, the source of the extra-soft, sand-filtered water central to Fukugao's brewing, this undiluted daiginjo delivers the full intensity of slow, elegant Niigata fermentation without compromise.
