Fukugao's Echigo Ikarashigawa Daiginjo from Fukugao Sake Brewery in Sanjo City, Niigata, uses Koshi Tanrei, a Niigata-native sake rice variety, polished to 40% for the brewery's most premium expression named after the Ikarashi River that flows through the area. Founded in 1897 as the only sake brewery in Sanjo, Fukugao draws on extra-soft, naturally filtered Ikarashi River water without chemical treatment for the delicate, elegant fermentation Niigata is famous for.
