Chiteino Shinpi (地底の神秘), meaning Mystery of the Underground, is a Daiginjo from Chitosezakari Shuzo in Kazuno, Akita, named for the ancient geological formations beneath this northernmost Akita brewing region. Founded in 1872, the brewery's semi-basement fermentation technique lends this daiginjo unusual depth alongside its characteristic aromatic refinement.
