Choyofukumusume Yamadanishiki Junmai Ginjo is brewed at Iwasakishuzo in Yamaguchi using Yamadanishiki rice polished to meet ginjo standards, with no added distilled alcohol. Yamadanishiki's large grain and high shinpaku percentage make it the preferred rice for ginjo and daiginjo production across Japan. This junmai ginjo expresses the combination of Yamaguchi's water profile and the elegance of premium sake rice.
