Choyofukumusume Gohyakumangoku Junmai Ginjo is brewed by Iwasaki Shuzo in Yamaguchi using Gohyakumangoku, a widely respected sake rice variety known for producing clean, light, and elegantly aromatic sake when polished to the ginjo level. The rice is milled to at least 60% for this junmai ginjo, with no distilled alcohol added.
