Named Chottomachi ('just a moment, please'), this junmai uses Omachi rice from Okayama, polished to 55%, with a nihonshu-do of +8.0 and 15.5% alcohol. It was developed to showcase the umami of Omachi and offers a sharp, dry finish alongside the variety's characteristic rich flavor.
