Hyogo is the home of Yamadanishiki, Japan's most prized sake rice, and Tajima refers to the northern sub-region of Hyogo known for its ideal brewing conditions. Brewed without added alcohol to the daiginjo standard, it represents the brewery's highest-tier pure rice expression.
