Chikusen's junmai daiginjo uses Yamadanishiki grown under the Konotori-hagukumu Noho, a pesticide-free farming method designed to support the habitat of Oriental white storks in the Tajima region of Hyogo. Polished to 40%, it has a soft, layered aroma and a naturally deep rice flavor with clean clarity.
