Gohyakumangoku polished to 60% forms this junmai shizuku from Kazuma Shuzo in Noto, Ishikawa. The shizuku method allows sake to drip freely from suspended bags without mechanical pressure, and the brewery's ultra-soft mountain spring water contributes a distinctive gentle mouthfeel to the resulting junmai.
