Bijincho Emi Junmai Ginjo from Nishimoto Shuzo in Tottori is part of the female-brewer-led Emi series, distinguished by a flowing fragrance, a rounded mouthfeel, and a clean finish. Toji Toyosawa Megumi, who trained at Tokyo University of Agriculture and the National Tax Agency's brewing research institute, developed this series to reflect women's sensibility in brewing.
