Azumacho Daiginjo uses Yamada Nishiki polished to 35% from Seto Shuzo in Saga. Polished to near-half its original size, the Yamada Nishiki produces an intensely refined daiginjo with the fragrant, precise character typical of Kyushu's premium sake tradition.
