This kimoto Honjozo from Asahikawa Shuzo in Yamagata uses naturally cultivated lactic acid bacteria during the starter preparation to produce a sake with inherent dryness and firm structure unusual in machine-made modern Honjozo. The kimoto method requires roughly twice the labor of contemporary techniques, yielding a more complex flavor base.
