Matsubaya Honten's Hokushinryu junmai ginjo namachodoshu is brewed in Obuse, Nagano, using locally grown Miyamanishiki rice and mineral-rich groundwater from beneath the 200-year-old cellar. Fresh-stored rather than fully pasteurized, it retains a bright, vivid fruitiness while the Nagano water contributes the characteristic weight and depth of this mountain brewery's house style.
