Ainosawa Daiginjo is Aizawa Shuzo's premium expression, crafted in Tochigi Prefecture where the cool highland climate provides favorable low-temperature fermentation conditions for producing daiginjo-grade sake. The brewery's access to soft Nasu Highland water allows for a clean, elegant fermentation that draws out the delicate fruity and floral notes expected at the daiginjo level.
