Description

Tokubetsu Junmai, 'special pure rice', requires either a superior polishing ratio or a distinctive ingredient or method that elevates it beyond standard junmai classification. Abekan Shuzo, founded in 1716 by order of the Date clan in Shiogama, Miyagi, has long emphasized rice-driven sake with clearly identifiable character depending on the grain used. From 2012, the brewery reorganized its lineup to highlight rice variety as the defining variable across all expressions, and this tokubetsu junmai reflects that philosophy in a fuller-bodied, savory register. Brewed alongside the renowned seafood culture of Matsushima Bay, it is designed to amplify umami at the table rather than stand apart from food.
