Yatagarasu Junmai Taruzake Tarutaru is aged in cedar casks, imparting the distinctive woody fragrance that characterizes taruzake. KK Kitaokahonten's use of Yoshino cedar, renowned throughout Nara as the finest for barrel aging, adds a spiced, resinous quality to the junmai base. The interplay between rice-forward sweetness and aromatic cedar creates a uniquely characterful sake.
