Matsunotsukasa Daiginjo Ultimus is the pinnacle non-junmai expression from Matsuse Shuzo in Shiga, with Yamada Nishiki from Hyogo's special A district polished to 30 percent and a small distilled-alcohol addition used to lift the aroma to its maximum expressive height. The name Ultimus, derived from the Latin for 'ultimate,' reflects the brewery's intent to reach the absolute limit of daiginjo refinement, and the sake is typically aged for over a year before release to integrate its extraordinary fragrance with a composed, dignified structure. This is one of the most prestigious expressions in the Matsunotsukasa lineup.
