
Sake Musashi rice, an Saitama Prefecture original variety, is polished to 35% and allowed to drip naturally through hanging bags into collecting vessels, a low-yield technique known as tobindori. The resulting daiginjo carries no rough edges, offering a clean and delicate profile; it earned a gold prize at the 2019 National New Sake Appraisal.
