Soshun Nakadori Junmai is a pure rice sake from Hayakawa Shuzo in Komono Town, Mie Prefecture, a small family-run brewery using soft underground water from the foothills of Mount Shakadake in the Suzuka mountain range. The nakadori portion, drawn from the middle of the press where balance of aroma and flavor is at its peak, produces a sake with clean, well-proportioned umami and gentle acidity.
