Toji Akihiko Soga trained extensively in Burgundy before returning to Obuse Shuzo, his family's 1842 brewery in Nagano, and the influence is unmistakable: the Sogga Pere et Fils line is presented in Burgundy-style wine bottles sealed with corks, named in French, and made in quantities so small that scarcity has elevated it to phantom status in Japan. Numero Un designates the specific yeast strain used in fermentation. Only Nagano-grown Miyamanishiki rice is used. The sake that results is unmistakably wine-adjacent: white-fruited, delicate, and elegant, with an aromatic precision that defies everything conventional sake expectations allow.
